I did my FIC with
On Track. Since all their instructors are part-time, and some of them have regular day-jobs Mon-Fri, they will certainly be happy to fit you in at weekends - that's exactly what I did for most of the course. They also don't necessarilly pair people off - if you happen to be there at the same time as someone else they'll pair you off for some mutual, but otherwise it doesn't matter. I thought the instruction I got there was excellent - highly recommended.
