Quetions from Davies "Handling the Big Jets"

I'm a Yank reading this book, and have some questions.

First of all, the term "Incidence" is repeatedly used in what I would guess is what we Yanks call "Angle of Attack". Is that correct? Our "angle of incidence" is the angle between the longitudinal axis and the chord. Just want to clear this one up so I have the phraseology correct.

Another question I have is regarding Vmo and Vdf. Davies talks about a "published crew-training" number between these two values on page 88, Paragraph C:
"As an acknowledgement of the fact that handling qualities can change above Mmo due to high Mach number effects a crew-training Mmo (and Vmo where necessary) has been established and is quoted in Flight Manuals. This is the indicated Mach value of the true Mach number which is halfway between Mmo and Mdf."

If I understand this correctly, crews somewhow disable the overspeed (in the sim, I'm assuming) and practice some sort of jet-upset halfway between Mmo and Mdf? Just curious, I've never done this or heard of it (any flight above the barber pole in sim or plane).
Maybe someone could elaborate.
