As I can't recall a single accident on ANY of the carriers described on the routings you describe, the safety record on Hong Kong to Europe flights has to be 100% on the lot. So no history to give you any concern at all.
In that time I am however sure pax on that routing have been killed going to/from the airport by road, so that's the bit of the trip you should avoid.
