Yes, you will need a new M1 visa, for which, of course, you will need your chosen school to issue you with an I-20 form, and you will need to jump through the appropriate SEVIS fee hoop.
I believe, that once these bits and pieces are accomplished, your previous recent visa will allow you to skip the interview and apply for the new visa by post. The downside of this is that your passport and you will probably be separated for a number of weeks.
