?I've always done it the other way around... pitch for speed and throttle for rate of descent...?
I haven't time to read the whole thread, but I assume you're talking about on final. If so, you'll find out in due course that this is a hotly debated topic among pilots and instructors. I'd say use whichever way round you're being taught, and worry about whether it's best later on. And you may find later on, like many of us, that you're not sure what you use for what; you just point at the runway and land the plane, somehow.
