Some people get a fATPL and never get a single job offer. You get one or two chances to enter the industry if you're lucky. There's a 98% chance that you will have to move city and maybe 80% chance that you will have to move country to secure your first job. You have to be very focused and a bit selfish unfortunately.

So you'll be job-hunting and depending on the European job market at the time you'll likely have to go and fly abroad. By then, your girlfriend will be going on 36 or 37... I think you can see where the problem lies. Some people would call it "either sh!t or get off the pot". This has nothing to do with Victoria's Secret models. You just need to be honest with yourself and your girlfriend about what you really want.
I appreciate your bluntness. I hope it's not coming down to that, she is a great woman and I'll be losing her maybe for nothing, but I sure as hell don't want to waste her time too. One thing tho, if I do manage to complete the training in 2 years, then I could work a "normal" job anyway while hunting a pilot position no? In that regard, I would be already financially stable, we could do what she wants too, just not during the training.
