You'll need to be an Australian citizen (not just an SCV or
PR visa holder) to go the E3 route to the US.
Australia is a larger job market, but there are also more pilots going for those jobs.
For what it's worth I wouldn't get too concerned about
which GA job to take, the biggest challenge is going to be actually
getting a first job in the first place.
