According to the procedure posted on GCAA website, they don't require any specific courses:

Procedure- Application: The Applicant shall submit all documents required for the conversion sought as stipulated in PART II.
- Review: the GCAA will review the documents submitted and verify if compliance with the CAR is achieved.
- Issue of a licence: The GCAA will only issue an UAE licence when the GCAA is completely satisfied that all regulatory requirements have been adequately addressed.
- Delivery of Licence: Collection shall be at GCAA Dubai Office / deliver by courier.
- Record: The Applicant will provide all documents required for filing purposes.

- One recent color photograph with white background 3.0 x 3.5 cm (Attach .gif, .png, .jpg or .jpeg file only)

- Skill Test for the second stage of the application
