Everyone just does it themselves. Company sends you an LCA, you go for an interview with all your documents.

This was my interview experience,

Officer: "So why are you applying for an E3?"
Me: "I have a job offer and meet the requirements. Do you want to see?"
Officer: "You're approved, NEXT!"

The last administration was a bit more hard line on immigration, and the consulates, especially Sydney, started to up their game a bit with actually requiring proof degrees and stuff, but apparently its all easy again now. Lots of E3s over here without a degree but YMMV by consulate if that is your case.
