A touchscreen unit is not going to qualify as the controls wouldn't work in the same way (effort required, range of movement etc). See CS-FSTD and CS-FCD. That's for EASA at any rate - I think FAA rules are more permissive but I don't have enough knowledge of that regulatory environment to expand further.
An FTD1 with touchscreens and no flight controls can be qualified as such and can be used and credited as per the relevant OSD. Obviously no handling exercises but for systems etc a good training tool.
Worth reading NPA2020-15 as the regulations governing lower level devices are being significantly revised by EASA
