Planning max payload - winds aloft

Hi,
Quick question for other dispatchers:
The company I work for uses the Jetplanner as the main ops tool. We fly cargo with 762 and when calculating the max payload for sales offers, some of us use winds aloft 0 with std ISA, and some opt for using the historical winds & ISA dev. How do YOU go about it and why? For the purposes of the question assume longer distances +3000nm, overland, dates/times are known.
