CAP 562 is still in print, but is now titled "Civil Aircraft Airworthiness Information and Procedures (CAAIP)". CAP562 contains the information formerly presented in CAIPs but updated in line with current practices. You can buy it from the UKCAA. See

As for the old original CAIPs, mono is right. You'll have to prise them from the cold dead hand of an expired LAE. We're sentimentally attached to the old 'King James' version...
