Returning to the question posed by the OP, I've always enjoyed a few days stay in the Hatta Fort Hotel - a bit dated, yes, but I've always considered that one of its charms. The temperature is usually much cooler in Hatta, and the place is pretty laid-back.
Hatta is actually really nice. Mainly because it's nothing like being in Dubai.
