If you don't log in and you open Youtube from a "Private/Incongnito" window of you favourite browser I would imagine that they will have no idea who you are and give you a brand new profile. Maybe.
If it doesn't work they are doing browser fingerprinting and have guessed your identity from that. Need another plan in that case. I've not worried myself about it but there are anti-fingerprinting measures that you can take.
The idea of Private windows is when you close them everything gets wiped and so every time you close ALL open Private windows then open a new one you get to start again.
