If your previous airline provided a monthly recap of flight time that you used to reconcile your pay, that would reflect your professional flying history for interview purposes. As far as logbook stamps go, you could go to a notary at your bank and they can stamp your pages. I went to a foreign police station and had mine stamped. Almost any kind of stamp will do, they just like to see pretty stamps.
