I wouldn’t be too sure about that. Even if your wife qualifies for a visa, you might find getting a work visa either very difficult or very expensive (£5k+ for a spouse visa, ISTR).
Before you spend any money on licence conversion, I would definitely do some more digging and/or consult an immigration specialist. Helicopter pilots don’t currently qualify under the visa points system.
