Well spotted. My quick analysis indicates - always pay in the default currency for single sectors. The default currency is based upon the country of departure.
If booking a return with UK origin to the Euro zone, the return leg conversion to GBP is almost the same as the interbank rate (it's actually a fraction cheaper in my test than booking two singles - only pence cheaper).
