If a company wants an A320 rated pilot in Europe they want 500 on type,If you do a conversion to EASA leave rating off at least you will be able to apply for non type rated positions,Companies want you to do their own type rating program and be bonded if you don't have 500 on type.Instructing position in my opinion is the best bet.
This will increase your own flight skills,boost your total time (needed as most airlines require minimum 1000tt before applying)and increase your networking in the industry,it can also be rewarding to help others gaining their own licences.
