Unfortunately your choices for a 604 type rating are CAE or Flightsafety. Which is partly why it's so expensive - lack of competition.
If you're talking an EASA licence, yes the landings need to be done in an aircraft. It needs to be the one you are going to fly since virtually noone wil hire you a large jet for training.
