I cannot imagine why any airline would do that unless they had no idea when the fog would lift and didn't want to keep the passengers waiting at STN with no information. It can't be cheap offloading diverted pax at STN and then paying several coach companies to bus pax down to SOU. That's why pax are usually kept on board until weather improves.
easyJet doesn't seem to have a handle on their costs.
