I’ve done both jobs. The rules and regulations are totally different. I’ve flown like this video on operations and I certainly wouldn’t have wanted that to be my first experience. You need to practice.
That said, on HEMS I have turned back with a 400’ cloudbase/20km visibility because it wasn’t legal. Lots of people claiming that this is dangerous. Well sorry, but training for war HAS to have a potential increase in risk.
