Options or offers? Some find it harder than they thought to land a job once in Dubai, don't assume because she is qualified for something at home she will get hired for it in Dubai; especially if she has the "wrong" kind of passport...
Married friends moved to DxB thinking Mrs would easily get a job her field, she didn't for about a year so factor that possibility in if she doesn't have an actual offer on the table. If you can make it with just you working for a while you'll be OK. Friends luckily didn't have kids/school to worry about so they were good.
She may want to check out some of the expat forums, there are several with sections dedicated to the woman's side of settling/job hunting etc in the UAE.
