After that, what A/C would be better to gain experience and hours in to get into charter flying either in Perth or Down South/ Up North? An Airvan or C210 or both?

210 time is well regarded by many northern operators. A quick search of the casa registration database gives 265 210s and only 80 GA8s. If you can fly a 172 you can fly an Airvan.
