Normally you'd be P/UT, unless they're just along for the ride, in which case you're PiC. P2 belongs in multi-crew operations.

If a company's authority-approved procedures demand that an aeroplane is operated multi-pilot, then it's an interesting question...

Does that not depend upon company procedures? If they are set up as a 2-pilot operation within their authority approved procedures manual, then it is legally logged as P2 isn't it?
