Sorry, I don't have any personal experience, but here is a list (http://www.copanational.org/non-members/LearntoFly/Learn%20to%20Fly%20-%20Seaplane%20Schools%20Ont.htm) that may be helpful.
Also, Orillia Aviation (http://www.orilliaaviation.com/) has been around for quite a while and a friend of mine was fairly pleased with it. He did complain that although they will let graduates of their float endorsement program rent solo, they are somewhat restrictive (apparently a separate checkout is required for each individual lake). I have another friend who keeps his C-180 at Orillia; he is also happy enough with them, although they charge him $25 to move the plane from its tie-down to the water or vice versa (for a total of $50 each trip). Orillia is about 1.5 hours north of Toronto by car.
Aviation Canada (http://www.aviationcanada.ca/) has a special seaplane section in each issue, and once a year they publish a list of all floatplane training facilities across the country, with basic information e.g. aircraft types, hourly rates, accodmodation availability, etc.
Finally, the Canadian Seaplane Pilots Association (http://www.canadianseaplane.com/index.htm) may be able to provide you with some useful information.
I hope that this helps.

Rood,
I used to fly out of the Ottawa Flying Club. They had started in recent years doing a float rating course on a C172-XP in the summer months ......... dunno if they still do it. Check 'em out at www.ofc.ca
Good luck, it would be a lot of fun !
Cheers, CG
