How much would a good second hand Long-EZ cost to buy, preferably in GB£

Anywhere between £15k and £35k, depending upon condition and avionics fit. I'd reckon on about £20-£25 for a good one, since I see little point in buying an aeroplane full of expensive avionics when the permit limits you to day VMC.
