My FI licence lapsed 6 years ago (se), I am now wanting to do some multi instructing.
Does anybody know what I would have to do, to be able to do this?

You will need to do the CRI(ME Course) LASORS H3.3
An applicant for the issue of a CRI(SPA) rating for
multi-engine aeroplanes shall have:
a. A valid Multi-Engine Piston (Land) Class or Single
Pilot Multi-Engine Type Rating.
b. Completed at least 500 hours flight time as pilot of
aeroplanes.
c. Completed at least 30 hours as PIC on the applicable
type or class of aeroplane prior to commencing the
course. It should be noted that ME SPIC time is not
allowable towards this 30 hours requirement.
d. Completed an approved course at an approved FTO
or TRTO including at least five hours flight instruction
on the aeroplane or a flight simulator given by an
instructor approved for this purpose (see Appendix
1 to JAR-FCL 1.380 and AMC FCL 1.380); and 25
hours* teaching and learning theoretical knowledge
training.
e. Passed the relevant elements of a FI Skill Test in a
single pilot, multi-engine aeroplane with a suitably
qualified FIE(A).
* Applicants who hold or have held an FI(A), IRI(A),
TRI(A), SFI(A), STI(A), MCCI(A), FI(H), TRI(H), IRI(H)
or SFI(H) are credited for the Teaching and Learning part
of the CRI course.
There is no need to renew the FI(SE) unless you want to teach SE or teach on an Integrated course. If you want to teach ME IR then you will need an IRI qualification too.

I should have mentioned, I do hold an Ir and have 3000 + hrs on PA31

IR or IRI? You would need the IRI. To teach for the ME IR if only using the CRI ME. If using the FI then you would need the No Instrument Restriction to have been removed.

The number of hours on type or holding an ME IR is irrelevant at this point.

I hold an Ir.
At this point I would just like to teach ME Rating, then yes poss multi IR in the future.

The market for teaching ME is very limited in the UK, you can do that on the basis of a CRI rating, but if you want to teach IR then it might be more useful to do it by renewing the FI rating.
