Why do pilots have to apply an autopilot so early after takeoff at about 500ft?
Is it different for different aircraft?
Can the pilot not fly the SID manually?

They don't, minimum engage/disengage heights vary between different aircraft and yes.

Your information source is incorrect. The only time I used to engage the A/P on the '400 at low altitude was in very busy airspace, if flying a complicated SID or it was likely that weather avioidance would be needed soon after T/O. Another example when it would be sensible would be after a major system failure in order to release some brain capacity. I am sure others can think of more occasions when early engagement might be advisable.
