Just wondering does anyone know how to fly for the UN. Or is it just military pilots from various countries, members of the UN?

Whatever charter company holds the UN contract at the time.

Rossair, SAFAIR, are two in Sth Africa, and lots of Russian ones.

The UN to my knowledge does not own nor operate any a/c itself.
