Turbulence forecast North Atlantic, Westbound tracks

I'm just planning my trip over the atlantic and I use all the real world stuff because MS flightsim does the real world weather and I like to learn real things to keep my brain active :)
What is funny about this is the jet stream going from spain to the uk instead of it's normal west to east from canada to the UK...

Another question while I am here:
When it was cold say 18c in the house, I boil the kettle and no steam, yet when it was 25c in the house, it produced steam as if it was cold...
