What Approach Category is the A320?

Not sure what you mean.
The A320 is a Cat C aircraft ie we use Cat C minima etc. It is capable of Cat 3B autolands. |

....our 93.5 MTOM A321 was Cat D Can't remember what the MLM was. Haven't got access to the AFM and can't remember what the Airbus Weight Variant was. |
PANSOPS or TERPS?
For PANSOPS, both the 320 and the 321 are classed as Cat C, even though the 321 just creeps into the D bracket. But in some countries which uses TERPS as an approach standard, the 321 is in Cat D, and the 320 is in Cat D for circling minima. |
