Engine out Cruise

Can someone please advise on the above, is this a normal procedure caried out and why.

This is most unlikely to be a shot of an engine out cruise. I think you will find the centre engine contrail doesn't make itself obvious because the exhaust is immediately stirred into the wash of the fuselage and wing root airflow. The fuselage of DC10 and L1011 aircraft is wide and will create a wide column of mixed up air. The exhaust from the wing engines passes relatively undisturbed under the wing and then is angled outboard away from the central wash of air so it moves nearer the wingtip as the aeroplane passes onwards. It is not affected by the central wash at all and remains well defined and breaks down as the air mixes on itself more.
