Maximum Duty time in a 24-hour period: 11 hours

My question: When does duty time start and end?

Flight duty time:
Flight duty time is the total time commencing from the time of reporting at the
airport for the purpose of operating a flight and ending with the termination of a
flight or a series of flights (chocks on plus 15 minutes).
This is from AIC 28/1992 which deals with FDTL.

Usually the reporting time is one hour prior to departure of the flight.

So, does the duty time commence at the time we sign the medical at the airport, and end 15 mins after the engines have been shut down (considering it is the last flight of the day)?

Yes. From the time you sign-in at dispatch for the first flight / sector to 15 min past Chocks-On after the last sector / flight.
