No, I wouldn't have done that. Any normal pilot would have used a combination of thrust with trim control. That keeps the attitude from pitching too much.

Flying at this low airspeed to test their computerized airplane would have probably worked fine at that low altitude but somebody let TOGA take over and put it out of control for the trim setting...

You got that right. If they hit TOGA or what ever Airbus calls it, the game is over because you can't overide the pitchup with the underslung engines until they get pitch control.

I agree with fdr. If you get into an aerodynamic wing stall in the lower altitudes recovery should be possible by first not overusing thrust and using elevator and stab trim to get the nose down...
