Angel UK CAA Definition of Airwork ?

Dear All,
do any of you bright sparks out there have a notion of where i can find a legal CAA /EASA definition of "aerial work" and the medical requirement associated with such .

From my past the 757 had the same limitation 313 kts below fl100
