Angel UK CAA Definition of Airwork ?

Dear All,
do any of you bright sparks out there have a notion of where i can find a legal CAA /EASA definition of "aerial work" and the medical requirement associated with such .

I think you might find it is something to do with birdstrike tolerance of the windscreen. Birds don’t fly above 11000’ do they ???
From my past the 757 had the same limitation 313 kts below fl100

Oh come on does this really warrant so much criticism !! Many years ago at Gatwick in a B757 the tug had difficulty pushing back my aircraft because of too much deicing fluid spilt on the ramp....
