That's incorrect.

New cadets cannot fly A321 aircraft until they have been line flying for 6 months. This policy has been in place for some time (6 months or so)

Well that's not true, and hasn't been for some years.... I joined 5 years ago with an Airbus type rating and we did a 'bridging' course of sorts that consisted of 1 weeks ground school 4 or 5 sims...

At a later stage in the drill you set FL100 or MSA.

Big difference from what you said and may be very important.

Do you mean the Vertical Speed knob?? Pushing the v/s knob sets v/s to 0 and levels the aircraft....

Pushing the Alt knob will put the aircraft into a managed climb/descent.
