How did you go finding that EU based job? I'm in a similar situation. Ive been in corporate for the last 10 years but it's tricky to find those EU jobs utilising the FAA licence base.

That is true if you already hold an ICAO state issued ATPL (not frozen).

In my case, I hold an Australian CPL with ATPL credits. Until my CASA Licence is upgraded I am locked into the CAD CPL.
