A320 Beta Target

It is said that when ever engine failure happen at Take off phase or at GA phase , Beta target is displayed to indicate the lateral acceleration which is needed to be controlled by application of rudders by the pilot to get optimum performance during OEI.So what kind of indication does pilots have during an engine failure in cruise , approach phase for optimizing performance with out too much of lateral acceleration due OEI

That's not something that's "said", it's a fact.

preferring the pragmatic approach - rather than answering the question - apply necessary rudder to align the beta, apply the necessary rudder trim - so it flies feet off - reselect the autopilot.

What is OEI please?

I am happy with EO.
