but i dont succeed to find an answer in any book: what's the difference between an ILS papa, ILS tango and ILS sierra?

From recollection, this sounds like an Italian question. They have there procedures that differ slightly as a function of, for example, the go-around element of the procedure. ATC should clear you for ILS Papa, for example, in which case use the appropriate plate. The basic ILS portion uses the same radio facility etc.

Similar procedures are also used in Spain.

It usually means that they start from different locations. For instance, one may be from the hold over the field, followed by a procedural outbound leg, procedure turn to join the ILS. Another may come from a point on a star direct to the platform at a certain distance out on the localiser. Hence they have a different designator. As TopBunk says though, they use the same ILS facility ultimately.

P for primo
S for secundo, and
T for (italian for third)
i.e. order of preference of use.

Sounds like Malpensa. Each approach appears (from memort) to start from a different point and each has (again fom memory) a different missed approach procedure.
