VFR in Iceland?

Hello!

Considering going to Iceland to rent a plane, and do some flying? Can probably be a bit unstable weather, but there should be plenty of other things to see if that happends?

Anyone who has any ideas and recommandation for hotels, hostels or motels and where to fly?
