Pan Am in Miami has a 737-200 sim, I don't know how busy it is, but I imagine not very.

In the US under the FAA system there is only one 373 type rating good for -100s through -900s. Most of the 300s, 400s and 500s have glass cockpits, some of the old Southwest aircraft didn't to have a common cockpit with the 100s and 200s. But eventually even SW went glass.

Pan Am does have a 300 sim also according to the latest FAA list. Whether it is glass or not you would have to check. Also Global One Flight Training in Sanford, FL.

The only glass in SWA ‘Classics’ (300 & 500) was the cockpit windows and the IVSI. I suppose the weather radar was technically a piece of glass. They even removed the autothrottles - Which should give you a better picture of the advanced nature of the aircraft Both Classic Sims are now gone.

PanAm in Miami offer 737 (300.400.500) Type ratings

Canadian North Airlines owns the simulator. I know they lease to Flair so it is available. I believe it is in their hangar.
Canadian North hangar is at CYEG Edmonton, Alberta,
