Hi there nunos!
Ok, I'm Spanish so I think I can help you with this one.
Learning Spanish would be a great advantage, mainly because the majority of the FTO's operate in Spanish, with the rare exceptions of Adventia in Salamanca (www.adventia.org), Flight Training Europe in Jerez (www.flighttrainingeurope.com) and Airmed in Valencia (www.airmed.es), being the first two the best of all training organisations here.
Now, about the FI job prospects... I don't think there are as many opportunities here as in the UK. I am a FI(R) pilot and I'm considering very seriously moving to the UK to try to find some sort of job instructing, no matter where.
Hope I’ve been of some help.
Good luck mate!!
Cheers
