Teaching on own aircraft

if someone wants to learn on their own aircraft do you need to add it to the DTO/ATO list of aircraft?

According to EASA a DTO is only required to generically list their aircraft i.e C152; PA28 etc. So if it fits into your generic group there is nothing to do however: if you have filled in the CAAs requirement of listing all the registrations then it would constitute a change for which you would have to pay the due fee! Equal playing field and all that!
