First off, yes, I am fluffy. I'm also 6'6" and heavily framed, so I'm not THAT fluffy. So, where in Texas can I go to take spin training in an aircraft that can handle someone my size in the appropriate category for CG/etc.

You might want to look for a school with a Christen Eagle. We had a guy in the UK who was your size who competed in one at Standard level aerobatics. Maybe a Pitts S2B might work also.
