Question Instructor's C of T

Am I right in thinking that in order to renew my SEP class rating C of T I still, as a practising instructor, have to undergo the one hour flight with an instructor (as well as 12 hours in previous 24 months etc.)?

Yes I think so too. But the need for it is replaced by ANY proficiency check or skill test you have undertaken in the 12 month period.

Quite correct. An IMC rating revalidation is also acceptable as the 'dual flight with instructor'.
