Can anyone out there point me towards a website/publication that will explain in reasonable detail the workings of a generic FADEC system.

I just typed FADEC into my search engine and came up with nearly 2000 links! I did not look at them all (obviously) but there are at least two sites that may be of interest to you. One was refering to piston engined aircraft and one refered to turbine engines. Try http://www.fadec.com/ and http://www.synchrolite.com/FADEC.html Hope you have fun!
