If you have engine driven hydraulic pumps and the engines have two main settings taxi and flight i.e. they have 2 operating RPMs, do the hydraulic pumps still generate the same pressure in both engine modes?

yes.......

Time to look up variable displacement pumps there bud....

On the 737, the engine driven pump produces full system pressure from about 5% N2.
