Well, if you can manage to hold constant speed with a given thrust setting with constant speed the aircraft will perform similar to the same thrust setting with FLC - with the thrust you will control the vertical profile. The thing with stall protection is always mentioned but that applies only to Authrottle aircraft (with AT engaged) because otherwise FLC will still produce stall scenarios in climb or descent. I would recommend to fly what is convenient for you first and feel what kind of thrust setting results in which descent rate. The rest will come later and you will feel comfortable to use whatever mode suits you.
