Did I miss discussion of this? Does anyone really think this is a good idea, especially given Boeing's recent issues?

I'd like to understand what would happen if they inadvertently folded up for whatever reason.

There will be a system that will automatically fold up the other wing tip to make sure roll doesn't exceed control authority. It will have a single sensor on each wing tip and match the other wing to what is reported. But you don't need to know about that.
