Is there any definition of what these mean on an airport's public-facing departures websites, and can I make any deductions about what is going wrong if one of those statuses persists for far too long?

I would expect them mostly to have a duration of less than 10 minutes, yet at LHR & LGW at least, they are often shown for an hour.

Assuming that the websites show the same info that is shown on terminal departure screens then usually it is just a simple case of not being updated.
It is probably the responsibility of the ground/gate staff to keep this info up to date,ie,go to gate,flight boarding,final call etc.
We had an instance last week @ BHX following the problems in Brussels,where an evening flight was cancelled,but still showing as cancelled the following morning.Similarly an EK flight went tech one evening and was rescheduled for a lunchtime departure for the following day.The departure screen for a good while was showing as delayed with next info @ 2330.This was at 0300.The pax had already been taken to a hotel by this time.
